why does my jelly not set solid it comes out soft and runny
I use sur jel follow recipe on sur gel pkg and still can't seem to get it right
The problem most likely doesn't lie with either the recipe or the preparation. If your fridge isn't cold enough then it won't gelatinise right. Try dropping the temperature down a bit and see if that helps. You want to get a temperature as close to zero as possible (if less than zero then the water'll freeze before gelatinisation sets in).
